Hallo
Iemand het nie dalk vir my ‘n “familie” droewors en boerewors resep nie, ek soek een waar ek self die speserye meng, die pakke speserye doen dit nie vir my nie.

Stem saam. Alle vleis wat ek al bewerk het en self moes mix het baie beter gesmaak as die winkel se klaar gemengde speserye. Sal kyk of ek nog my 1980 resep kan opspoor

Een van die truuks is om self jou koljander te maal eerder as om uit 'n poitjie te gooi.

Ek deel dan maar eerste resep, staan bekend as Poppie se wors, dit is ‘n knoffel droëwors resep, ek pas net die vet aan tot 7.5kg vleis en 2.5kg vet. Stamp ook maar die knoffelsout!!

My opinie oor droë wors en boerewors is dat die tipe vet en gehalte vet 'n groter invloed het op die lekkerte as die spices.

Ek gebruik die volgende resep wat al generasies ver kom in ons familie:

Wildvleis Droewors Resep:

42 Kg Wildsvleis (±85%)
8Kg Brisket Vet (±15%) (Skaapstertvet beste as jy kan kry)
Swartpeper: 100ml
Gemaalde Naeltjies: 100ml
Fyn koljander: 300ml
Fyn neutmuskaat: 50ml
Fyn wonderpeper/Pimento: 170ml (dit is nie All Spice nie)
Worchester sous: 1.2l
Bruin asyn: 1.2l (Bly weg van water in droewors)
Fyn sout: 500g

Vir bakwors gebruik ek dieselfde resep as hierbo maar my vleis /vet verhouding word nou 80/20.

Gebruik maar gerus. Dit maak baie lekker wors.

Ek wil asb graag weet wat die rede is hoekom die gebruik van water nie aanbeveel word nie.
Ek gebruik wel water (crown se resepte) maar die tekstuur van my wors is nie hoe ek dit wil he nie. Dalk is dit die probleem maar wat maak die water aan die wors?
