Wild lewer amper dieselfde as hoender.....
Gooi net dubbel die brandewyn in.
As jy dalk 1962 se “Kook en geniet” het, daar is n heerlike lewer patee
resep daarin.

Alle grappies op n stokkie!!! ( Die brandewyn is tog baie belangrik)

Gooi bietjie meel op die skoongemaakte rou lewer ( in duim blokkies gesny)en braai in botter of olyfolie
tot driekwart gaar. Gooi spice na smaak terwyl braai. Laat rus tot goed tot afgekoel.

Gooi in versapper (liquidizer) saam met vars room en brandewyn tot die konsistensie
van n ou lister engin se ou olie. Giet in ou botter/ margarien bakkies halfvol
en gooi gesmelte botter (5mm) daaroor en sit in yskas.
Laat rus vir 2 dae in yskas en geniet!!!

Ek het die een al probeer.

2 uie
1 groen appel
450gr hoender lewer
60ml brannas of halwe koppie port
2 eetlepels room
1 teelepel lemon juice
kwart teelepel sout

kap uie appel in voedsel verwerker
maak hierdie mengsel, lewer en 50g vd botter gaar.
Gooi brannas in, en steek aan die brand.

Gooi alles in voedsel verwerker en blend (Gooi room by)

Laat in yskas afkoel.

Blend weer saam met suurlemoen sap en 110g botter in die voedsel verwerker.

Skep in klein bakkies.
Smelt oorblywende botter bo-oor om te seel

Is dit net ek of het deesdae se lewer smeer meer room as lewer in?

Ek kla nie want dit bly steeds lekker maar deesdae se lewer smeer proe nie meer dieselfde as die ou dae sin nie...

'n Ding wat ek hier in Frankryk leer maak het is paté de campgane - Patee van die platteland.

As dit begin herfs raak hier dan kry baie van die winkels specials op varkvleis. Die heelboude van so 25kg verkoop teen €2/pkg - Dis nou vir jou eie hamme maak. Ek het dit nog nie aangepak nie want dit vat tot 'n jaar om dit te maak.

Ek koop dan gewoonlik vark keel vleis - Lekker vetterig, en pork belly teen so €2.5/pkg en lewer en nietjies en harte teen minder as 1 euro per kilo.

Ek maak dan 'n mengsel van die vet vleis, lewer en nietjies en maal alles saam. Ek meng dan speserye in - heel peperkorrels, koljander, sage, tiemie, roosmaryn en al die ander spices wat ek op daai stadium in die kas het. Mens kan ook neute bygooi as jy wil en 'n koppie sherry/port/konjak of wat jy ook al wil.

Dan voer ek 'n bak uit met netvet en los genoeg oor om hom te kan toemaak ook. Dan laai ek die vleis in en maak hom toe met die netvet en dan gaan hy in 'n skottel water in die oond. Ek bak hom dan tot hy gaar is en laat hom afkoel en dan sny ek dit in sulke 10 cm dik skywe en vries dit. Dis heerlik vir snacks en partykeer eet ons dit sommer vir aandete met lekker vars gebakte baugettes en agurkies en ander koue vleis en olywe.

Of as jy wil kan jy ook individule stukkies netvet sny en hom dan vol vleis laai en toesteek met tandestokkie en op die braai gooi - soos 'n skilpadtjie. Baie lekker maar maak maar vet ;)
