Location: Brackenfell, Western Cape.
Evening all. If you had to choose between a kudu or gemsbok from the Kalahari region this time of the year, which would be the better option for fresh meat cuts, wet wors and biltong? I would like to know which is better value and/or tastier. Your input is valued.

Persoonlik verkies ek Kudu braai wors en biltong bo Gemsbok - dit smaak net vir my beter.
Maar as dit by die steaks kom is Gemsbok tops.
Gemsbok vetderm pofadder is darem ook n mooi starter - vrek weet!

'n Gemsbok of kudu is te min as jy wil wors, steaks en biltong maak.
Skiet een van elk. Dan maak jy steaks van die gemsbok se boude, rugstringe en fillets asook die kudu se fillets.
Sny biltonge uit koedoe se boude en rugstringe en gebruik altwee se blaaie, rug, nek en ribbes vir worsvleis.....

Hello fellow members. So my trip to the kalahari is happening next week and i need to decide how to process the meat should i be fortunate enough to take a Gemsbok in the dunes. I am hoping for a quick and clean kill.

Assuming a slaughtered weight of 100kg, can i use the following indicative weights:

Bones (incl neck & knuckles) 35kg?
Waste 10kg?
Usable meat 55kg?

The if i want only wet meat for the braai or pot, what would be the weights of each cut or section used for the following?

Steaks (rump, t-bone or fillet?)
Sausage (which cuts are used for this)
Roast ( any Gemsbok cut good for weber or oven?)
Mince or patties? Or is gemsbok too good for this?

Not sure of the weights above and also not sure if i need to add other meat when making wors for instance ( eg: 60% gemsbok, 30% beef brisket and 10% percy fat?)

Your feedback will help me with making wise choices and getting the most out of my Gemsbok. Sausage and a few steaks are my favourite.

Sean I believe that this is not the last time that you will be hunting so just do with the meat what you want and perhaps next time try something else.

Sean this is what I did with the eland cow I hunted 2 weeks ago.

Steak- Fillet,rump,sirloin and topside.

The rest of the meat were made into:
boerewors 50%
mince 30%
patties 20%

In the wors and patties a meat to fat ratio of 30% was used. only used soft fat. Got some from Henning (dankie!) and the rest was added by the butcher.

Lastly we cooked all the leftover meat from the bones for pies and other uses.

Ek stem vir Kudu,ek het al 'n redelike paar Gemsbokke gejag maar as ek kan kies dan vat ek enige dag 'n Koedoe. My Skoonpa wil my wurg as ek dit sê maar dis my persoonlike keuse.

my butcher advised that unless it is a very fat animal it is best not to cut tbones.
