Manne ek sal elke dag kerrie kos kan eet!

Die probleem is ek kry hom nooit soos ek hom soek nie!

Ek wil kerrie chops, wors, sosaties, pot ens maak.

So wat ek soek is n resep om die kerrie te maak en dan by tevoeg soos ek wil..

Ek maak nou al jare lank my eie kerrie mengsel. Hier is my resep:
2 gehoopde teelepels cumin sade
2 gehoopte teelepels coriander sade
1 gehoopte teelepel fennel sade
2 teelepels turmeric poeier
2 teelepels fenugreek poeier
1 gehoopte teelepel garlic poeier (of 3 vars knoffel huisies)
1 gehoopte telepel chillie flakes (of vars chillies na smaak)
1 telepel gemmer poeier (of duim grote suk vars gemmer)
1 knippie saffron in 1 koppie kook water
4 tamaties gedek in kookwater vir 10 minute dan afgeskil dan fyngekap of gepuree met die blender
1 groot ui fyngekap

Vat 'n droee pan en braai al die sade tot dit begin pop. (Nie die poeiers nie). Gooi sade dan in meul, voeg poeiers en chillie flakes by en maal. Gooi dan 3-4 eetlepels soneblom olie (nie olyf nie) in pan en braai uie tot deurskynend en voeg by die poeier mengsel, vars chillie, vars knoffel, vars gemmer vir 5 minute. Voeg koppie saffron water by en voeg gekapte / puree tamaties by. Kook die sous vir 10 minute om te ontwikkel en voeg dan vleis of hoender by. As die vloeistof begin min raak voeg 1 blik Coconut melk by. As jy nog vloeistof soek gooi kookwater by. Die enigste aanpassing wat jy kan maak op die resep is die chillies. Hiermee reguleer jy die warmte van die dis. Al gooi jy zero chillie by sal dit vreeslik lekker kerrie wees maar geen hitte he nie.

Jip, maar moet net nie n kg op n slag koop nie.

Gebruik 4-6 draaitjies op n slag.

Ek het so paar jaar in Durbs gebly en daar by die Indier vroue wat saam met my gewerk het leer ordentlike charo kerrie maak. Dit is ‘n proses maar die geheim lê soos bo genoem om jou speseryebte brand maar nie te verbrand. En gebruik ghee.

Laasweek was ek op die einde van my stash en vrek lus vir lams-kerrie hier in die koue nat. Hoop uie en groenbine met songedroogte tamaties gebraai en ‘n blikkie supermark Durban kerrie groente daarin gegooi. Dit was een van my bestes in ‘n lang tyd. O ja, tamatienpuree, sout en ekstra chillie na smaak.
