Ek moet se ek is nou bietjie moeg vir crown en al die ander biltong speserye daar buite. Ek wil graag die ou tradisionele resepte probeer. Ek wil 'n paar stukkies kudu hang, wat sal julle voorstel?

Ek het lanklaas my eie biltongmengsel gemaak, maar wat vir my die beste gewerk het was Kook&Geniet se resep. Ek het net ie heel koljander gehad nie, toe gooi ek sommer gemaalde koljander in. Selfde gedoen met die droeëwors.

Growwe sout & fyn swartpeper na smaak ek weeg nie af nie. Bruinsuiker eetlepel vir 'n koppie sout en peper. Meng goed. Srinkel wyn asyn oor vleis en bestrooie met sout, pak in lae. As jy nie die velis gaan omdraai nie, moet jy onthou die biltng wat onder lê kry die meeste pekel, so pak die dik stukke onder. Na 24 uur hang jy.

Ek het nou weer bees biltong gemaak, jammer om te sê vir die Crown en Freddie Hirsch manne dis hoe biltong moet proe. Soos bees, nie een of ander chemiese BBQ, Knoffel of Gunsmoke geur nie.

Het een van julle manne dalk Kook en Geniet se biltong resep wat hy hier kan plaas asseblief. Die Kook en Geniet wat ek het is baie oud en daar praat hulle niks van koljander nie. Wil net sien of daar nie n' nuwer weergawe is nie

Hierdie is een van die geheime. Ek gooi rooiwyn asyn en maal self die koljander en peper.

En proe aan die mengsel voor jy hom smeer. As hy nou nie lekker is nie, gaan hy ook nie lekker raak wanneer hy in die vleis intrek nie.

Al hoe ons maak is

Laat die biltong vir n dag in 1/3 bruin asyn en water le vir n dag.

Onder in die bak gooi ons n mengsel van sout fyn swart peper en growwe koljander. Pak die 1ste laag vleis en weer die sout mengsel. Sout hom gewoonlik in die aand en laat hom oornag staan volgende oggend vroeg word hulle uitgehaal en opgehang.

Dis hoe ons dit my hele lewe doen en dis al manier hoe ek van biltong hou.

Die koljander moet net in n pan geskroei word en dan op n plank met n koekroller gebreek word ;D

SUIDWES Biltong resep..

Gebruik BEES of WILD silverside en Topside....

Sny die vleis in so 2 cm dik skywe...

Gooi nou die volgende speserye op...per Kg vleis (biltong)

18 Gr sout
2 Gr peper
4 Gr gebrande koljander
2 gr bruin suiker

Gooi die vleis in n meng bak, en die smeer al die speserye in die vleis in...sprinkel bietjie Worchestersous oor...( Bly weg van ASYN af)

Laat staan vir 12 ure in koeler, en meng weer deur laat staan weer 12 ure ...en hang op om droog te word..in goed geventileerde vertrek of voor n waaier..

hier in Upington raak vleis gou biltong, ek hou daarvan om sommar alle ekstra vleis te droog en is nie mal oor koljander nie. dus is my gou gou biltong resep eenvoudig. sout en peper sommar met die hand gegooi, op vleis wat bitjie bruin druiweasyn op het. dit los ek 'n rukkie 'n uur of drie en hang, ek smul soms aan dit die volgende dag(nat biltong) magies maar vleis is lekker!
