More Julle,

Ek wonder sommer hoe maak julle as jou lekker vleisies nou uit die droër kom (veral as jy 'n klompie gemaak het) en jy moet dit bêre vir 'n tyd?
Plastiek sakkies laat hulle sweet, en papier sakkies droog hom erg uit, moet hy maar vrieskas toe?

Of jy kan jou biltong in vacuum sakkies pak en vacuum en vries. As jy nie n' vacuum masjien het nie kan jy dit sommer na jou naaste slaghuis vat dat hulle dit gou vir jou verpak en vacuum

Ek sny myne klaar en verpak dit dan ook in 3 tot 5 kg pakke maar sonder dat dit gesout is en vries dit dan. So verseker jy dat jy deur die jaar biltong het wat hang.

As dit n grootmaat is, maande se biltong - vacuum ek en vrieskas toe.
Paar dae tot so week of twee se voorraad sit ek in n kussingsloop in die spens.

Ek vries my vleis ook nat en vakuum verpak, en maak biltong deur die jaar.
Die geheim agter dit het n slagter my vertel is die volgende:
Deur die vleis te vries, bars die selletjies binne die weefsel, en daarom laat hy baie bloederigheid vry.
Dan as jy speserye en asyn bygooi om bilong te maak, neem die vleis meer daarvan in, as vleis wat nie gevries was nie, en smaak dus beter.

Soos ek noem, ek is dit vertel en dit maak sin.

As ek my biltong gedroog het, sit ek dit in 'n katoen kussingsloop in die vrieskas. Kan so gehou word vir maande!

Ek het altyd al my biltong gemaak en dan maar gevries. Hoe langer dit gele het hoe minder lekker het dit geproe.

Ek het van so 2jaar terug af net my biltong vleis gevries sonder sy sout en sous en uit gehaal soos ek lus kry en dan biltong gemaak. Baie beter!

Soos almal hierbo se. Ek kerf my biltong terwyl dit klam is en vakuum dit dan (of soos jy daarvan hou). Daarna vrieskas toe. Ek het eenkeer gedink my biltong is klaar en toe op 'n gevriesde pakkie afgekom meer as 'n jaar later. Ek het dit vanself laat ontdooi en dit het gesmaak soos toe ek dit gevries het. Ek het gemerk dit werk beter as jy die biltong effens dikker kerf voor jy dit vries.

Hoe lus raak ek nou vir koedoe biltong met 'n effense gesoute botter saam. ><)
