Brazilian Dish

You know those Brazilian restaurants that let you eat as much meat as you can, they bring the whole cut to your table and let you choose slices of it - called a Churrascaria or a Rodizio. They have a green / red signal when to bring you more meat.
Well they always have a buffet selection of salads and soups and stews to fill you up first.
This is one of those buffett dishes - a Black Beans and Chourico stew. Awesome food. You will eat your fingers off. Easy to prepare, do not look at it and think difficult, to much work. Takes 15 mins to prep, a few hours to potjie and you pik you fingers off.
H’sBlack Bean and Chourico Stew
Ingredients:
300 to 400 grams cubed pork
4 Chourico sausages – cut into ½” pieces - Chop some in half again
3 tins beans – kidney, black beans, red speckled beans etc
1 tin lentils
1 onion - sliced
1 ½ cups of chicken stock - Make with hot water and one stock cube
1 teaspoon curry powder
1 teaspoon minced garlic
3 bay leaves
Salt and Pepper to taste
2 Tablespoons oil
Preparation:
Put oil in pan, heat
Fry onion in pan till golden brown, translucent – add to pot
Fry pork cubes in pan till browned – add to pot
Add Chourico to pot
Add chicken stock
Add curry powder
Add garlic
Add bay leaves
Add salt and pepper
Drain beans – add 1 tin to pot whole, pulse 2 tins in liquidizer till minced, add to pot ( don’t over liquidize the beans, just pulse a few times )
Drain lentils – add 2/3 tin to pot whole, pulse 1/3 tin till minced, add to pot
Method:
Slow cooker / potjie / casserole dish in oven – prep as above, slow cook for 3 to 4 hours
Pressure cooker – prep as above, cook on high for 25 minutes, rapid steam drain
